Rainy Days
While I do miss the nice wether, there are plenty of ups to rain. First of all it waters our lawn and plants. :) That's a plus for sure. When ever it is a rainy day, I get in a cooking mood! I am always in the mood to cook, but when it rains then I really want to cook! Usually something nice you can enjoy while sitting by the window. Is it just me or do you like to bake on rainy days?

May Iron Chef Challenge:
For the month of May, you have to make something with...............................mozzerella cheese! I am very excited to see what you come up with. In the past I have mostly done dessert stuff, but in honor of Cinco de Mayo, for the month of May I challenge you to make something tasty with mozzerella cheese.

It's been a while since I have done a recipe. I came across this recipe on thegirlwhoateeverything's blog. (to the left is a link). I made them this morning and they
are very tasty!!! Bananna Crumb Muffins. YUM!
Banana Crumb Muffin
BATTER:
11/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
TOPPING:
1/3 cup packed brown sugar
2 tablespoons all purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon butter
DIRECTIONS
Preheat oven to 375 degrees. Lightly grease muffin pan or line with muffin papers
In a large bowl, mix together 1 1/2 cup flour, baking soda, baking powder, and salt. In another bowl, beat together bananas, sugar, egg, vanilla, cinnamon, nutmeg, and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in prejeated oven for 18-20 minutes, until a toothpick inserted into center of muffin comes out clean.
You really need to make these!!! They are super easy to make and taste fantastic! ENJOY!
